(sui, water) + (so, element), calque of Dutch waterstof (hydrogen; waterstuff). Compare German Wasserstoff, Luxembourgish Waasserstoff.

Considered to be used first in Udagawa Yōan's (宇田川榕菴, 1798 – 1846) book Introduction to Chemistry (舎密開宗, Seimi Kaisō), a compilation of various scientific books in Dutch.
